These Delicious Raspberry and White Chocolate Muffins are super easy to make. They are soft, tender and fluffy.

Ingredients:
375g (2 ½ cups) self raising flour
100g butter, chopped
200g sugar (a little bit less than 1 cup)
250ml (1 cup) milk
1 egg, lightly beaten
1 cup fresh or frozen raspberries
½ cup white chocolate bites
1 - 2 tbsp icing sugar to dust (optional)

Bake in the oven 190C/375F for about 20 min. Stand for 5 minutes before turning onto a wire rack to cool. Dust with some icing sugar before serving (optional).

If you don't have self raising flour you can easily make it at home: just add 2 tsp of baking powder into 150g of plain flour. That's all!
