RECIPES
*PINEAPPLE PANCAKES* 1 serving
1 small, ripe pineapple
1 small ripe banana
40g Oats
40g Buckwheat
100ml Plant Milk
120ml Water
METHOD
Prepare the pineapple by removing the skin. Slice into small, thin disks, removing the core.
Place oats, buckwheat, plant milk, banana into a blender.
Pour the mixture onto the pan (4 pancakes)
After 5 mins, add the pineapple rings onto the pancakes and press down slightly
After another few mins, flip the pancakes over
(Flip them twice each side so the pancakes cook through)
*MUNG BEAN & BROCCOLI SOUP* 4 Servings
2 stalks Celery
1 medium sized white Onion (or 1 small and 1 small red Onion)
2 small bell Pepper
1 head of Broccoli
2 Garlic Cloves, minced
400g (1 can) chopped Tomatoes
100g Mung beans, soaked 24 hrs
1/2 TSP Turmeric powder
1/2 TSP Chili Flakes
1/2 TSP Smoked Paprika
450ml Veggie Stock
METHOD
Soak the dry Mung beans in cold water for 24 hours (approx)
Finely chop the vegetables.
Add onions, celery, peppers & garlic to a large pan. over medium-high heat. Cook for a few mins.
Rinse the mung beans, remove any that look bad.
Add all of the remaining ingredients (except Broccoli), stir well & cook on medium heat for 20 mins. Stir occasionally.
Add Broccoli, continue to cook for 15-20 mins.
*MUSHROOM RISOTTO* 4 Servings
350g Fresh Mushrooms (I used White and Shitake)
1 Large Onion
2 Cloves Garlic
1 medium Courgette
200g Arborio Risotto Rice
900ml Veggie Stock
50-100ml Soya Milk
Salt, Pepper
METHOD
Finely chop 1/2 of the mushrooms, courgette, & onion. Slice the remaining mushrooms in halves.
Add dry rice and crushed garlic to a large pan, toast for 5 mins.
Add the chopped veggies and mix. After a few minutes, add 1/4 of the stock. Cover.
When the liquid is absorbed, add another 1/4 of the stock. Repeat until the liquid is absorbed.
In a separate pan, saute the halved mushrooms for a few minutes, until lightly cooked.
When the risotto is cooked, mix the mushrooms through & add a splash of soya milk, salt & pepper. Cook for a final few mins & serve.
