⮕ Typhoon Shelter Fried Crab - better known as Bei Fung Tong refers to the typhoon shelter bays in Hong Kong. In the earlier days, the waterfront of Hong Kong’s Causeway Bay was a floating neighborhood of Chinese junks, sampans, and tenders that serviced the merchant ships docked at the harbor. Gradually, it also became home to a small fleet of floating residents and restaurants serving the freshest catch of the day where popular Hong Kong dishes emerged. The best-known dish was typhoon shelter fried crab, cooked on the small kerosene stoves on the boats. To make typhoon shelter crab you start with a wok, flour and dredge cut pieces of meaty crab such as mud crab or dungeness crab and deep fry in hot oil to get a crispy golden crust. Add in soy sauce, chili peppers, onions, sugar and scallions and stir fry with the crab. Then the best part is stir frying in huge amounts of fried garlic and black beans with the crab to coat it to a beautiful finish.
