To make Rava pongal

Moong Dal - 1/4 Cup
Rava / Semolina - 1/2 Cup ( 125 Ml )
Oil - 1 Tbsp
Peppercorns - 1 Tsp
Cumin Seeds - 1 Tsp
Cashew Nuts - 15 Nos
Hing / Asafoetida - 1/2 Tsp
Green Chilli - 2 Nos
Ginger
Curry Leaves
Turmeric Powder
Hot Water - 3 Cups
Salt
Ghee
Water

Method

Dry roast ¼ cup moong dal in a pan for 2 minutes on low flame, just until a mild aroma comes.

Wash the roasted dal, add it to a pressure cooker with enough water and a pinch of turmeric.

Pressure cook for 5 whistles and set aside.

In a kadai, heat 1 tbsp oil and 1 tbsp ghee.

Add 1 tsp whole pepper, 1 tsp cumin seeds, and 10–15 cashews.

Roast till golden. Add ½ tsp asafoetida, 2 slit green chilies, a small piece of chopped ginger, and a few curry leaves.

Sauté well. Add a pinch of turmeric for color.

Now add ½ cup rava and roast on medium flame for 2–3 minutes until aromatic.

Add the cooked moong dal and mix.

Then, add 1 tsp salt and 1½ cups hot water gradually while stirring. Mix well without lumps.

Cover and cook on medium flame for 5 minutes until the pongal thickens.

Finally, drizzle 1 tbsp ghee on top, mix gently, and serve hot with chutney or sambar.

Creamy, soft Rava Pongal is ready to enjoy!
