Creamy Cajun Shrimp and Orzo

Ingredients:

Shrimp:

180g shrimp, peeled and deveined

1 tsp Cajun seasoning

1 tbsp oil

Orzo:

2 tbsp butter

1 small onion, finely chopped

3 garlic cloves, minced

150g orzo pasta

800ml chicken stock (made from 2 chicken stock cubes dissolved in 2 large cups of hot water)

3 broccoli florets, chopped

2 tbsp cream

3 tbsp grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions:

Prepare the Shrimp:

In a bowl, mix the shrimp with Cajun seasoning and oil until well coated.

Heat a pan over medium-high heat and fry the shrimp for 2-3 minutes on each side until pink and cooked through. Remove from the pan and set aside.

Cook the Orzo:

In the same pan, melt the butter over medium heat.

Add the chopped onion and garlic, sauté for about 2 minutes until fragrant and translucent.

Stir in the orzo pasta, coating it well with the butter and aromatics.

Pour in the chicken stock and bring to a boil. Reduce heat and simmer for about 10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.

Add the chopped broccoli florets and cook for an additional 2-3 minutes until tender-crisp.

Finish the Dish:

Stir in the cream and grated Parmesan cheese, mixing well until creamy and smooth.

Taste and adjust seasoning if needed.

Divide the orzo mixture between two plates.

Serve:

Place the cooked shrimp on top of the orzo.

Garnish with fresh parsley and additional Parmesan cheese.

Serve immediately and enjoy!

Tips and Tricks:

Shrimp: Ensure the shrimp are dry before seasoning to get a nice sear. Don’t overcrowd the pan; cook in batches if necessary.

Orzo: Stir frequently to prevent sticking. If the mixture gets too thick before the orzo is fully cooked, add a little more stock or water.

Cream: For a lighter version, substitute half-and-half or milk for the cream.

Parmesan: Freshly grated Parmesan melts better and provides a richer flavor than pre-grated varieties.

Garnish: Fresh herbs like parsley add a burst of color and freshness to the dish.
