🥄 What You’ll Need:

For the Overnight Oats Base:
½ cup oats
½ cup milk (Fairlife 0% or your choice)
⅓ cup Greek yogurt
Pinch of salt
1 tsp honey
1 tbsp vanilla extract
1 tsp chia seeds
2 tsp cottage cheese or cream cheese
For the Lemon Berry Topping:
2 cups mixed berries (blueberries, strawberries, blackberries)
1 tbsp honey
Zest of 1 lemon
Juice of ½ a lemon
Optional Garnish:
Fresh raspberries
How to Make It:
1️⃣ Prepare the Overnight Oats Base:

In a bowl or jar, mix oats, milk, yogurt, salt, honey, vanilla, chia seeds, and cottage cheese (or cream cheese).
Stir well, cover, and refrigerate overnight (6-8 hours).
2️⃣ Make the Lemon Berry Topping:

In a small saucepan, combine mixed berries, honey, lemon zest, and lemon juice.
Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens (about 5 minutes).
Let it cool, then store in the fridge until ready to use.
3️⃣ Assemble and Serve:

In the morning, give the oats a quick stir.
Spoon the chilled lemon berry topping over the oats.
Garnish with fresh raspberries if desired.
