Ingredients:
1kg of plump raisins
500g of succulent currants
150g of glace cherries
Optional: 225g of finely chopped nuts for an extra crunch
600ml of indulgent brandy for feeding the cake or marinating the fruit the day before
450g of butter
275g of rich brown sugar
3 teaspoons of zesty lemon juice
6 large, golden eggs
3 tablespoons of luscious black treacle
1 teaspoon of aromatic almond extract
450g of premium plain flour
225g of finely ground almonds
1.5 teaspoons of warm cinnamon
0.75 teaspoon of ground ginger
Instructions:
Begin the festive journey the day before if you can, by marinating a mixture of raisins, currants, and cherries in a generous 600ml of brandy, allowing the fruits to soak up the holiday spirit. If you haven't time to do this do not worry you will feed the cake regularly the weeks up to Christmas.
In a bowl, cream together 450g of butter and 275g of brown sugar until the mixture is light, fluffy, and embodies the spirit of Christmas.
Add 6 large eggs to the batter, one by one, mixing well after each addition.
Gently fold in the marinated fruits, 3 teaspoons of lemon juice, 3 tablespoons of black treacle, and 1 teaspoon of almond extract.
In a separate bowl, combine 450g of plain flour, 225g of ground almonds, 1.5 teaspoons of cinnamon, and 0.75 teaspoon of ground ginger. This aromatic blend will be the heart of your festive creation.
Gradually add the dry ingredients to the wet mixture, stirring gently to ensure every ingredient is wrapped in the holiday embrace.
Prepare your 10" cake tin by lining it with double layers of greaseproof paper, creating a cocoon for your masterpiece.
