Our banana bread is a harmonious blend of moist, sweet, and slightly spiced perfection. But there's a SECRET ingredient that makes this recipe truly extraordinary: very ripe bananas. You want them to be almost decomposing, soft, mushy, and brown. The ripeness of the bananas imparts an intense, natural sweetness to the bread. It's like nature's candy. These overripe bananas elevate the flavour, adding a robust and complex sweetness that allows us to use less added sugar for a healthier snack. It's a clever trick that reduces sugar and gives our banana bread that extra layer of rich, indulgent taste.

Ingredients
• 225g/8oz self-raising flour
• 2 teaspoons baking powder
• 80g/2.5oz coconut sugar or your preferred sweetener
• 1 teaspoon mixed spice
• 1 teaspoon ground cinnamon (optional)
• 60g sultanas (substitute with raisins or walnuts, if desired)
• 3 large overripe bananas, mashed
• 125ml almond milk
• 1 teaspoon vanilla essence (optional)

To Garnish
• 1 ripe banana

Ingredientes (Spanish)
225 g/8 oz de harina de repostería
2 cucharaditas de levadura en polvo
80 g de azúcar de coco o el edulcorante que prefiera
1 cucharadita de mezcla de especias
1 cucharadita de especias mixtas
1 cucharadita de canela molida (opcional)
60 g de pasas sultanas (sustitúyalas por pasas o nueces, si lo desea)
3 plátanos grandes demasiado maduros, machacados
125 ml de leche de almendras
1 cucharadita de esencia de vainilla (opcional)

Para decorar
1 plátano maduro

Notes:
1. Spices: If mixed spice isn't your preference, feel free to substitute it with cinnamon, nutmeg, or allspice according to your taste. We find that the combination of cinnamon and mixed spice elevates the flavour.

2. Sultanas: If you're not a fan of sultanas, you can easily substitute them with raisins or even chopped walnuts.

3. Baking Pan: If you don't have a loaf tin, you can use a lightly oiled 20cm (8-inch) round cake pan.

4. Banana Ripeness: Use very ripe bananas; they should be almost decomposing, soft, mushy, and brown. If your bananas aren't quite ripe, you can bake them in a 180°C (356°F) oven for about 10 minutes to ripen them.

5. Sugar: The natural sweetness of very ripe bananas allows you to use less sugar for a healthier snack. You can use a combination of 40g of sugar and 40g of natural sweeternal (stevia) to reduce calories too.
