I love sweet potato casserole, especially around the hoildays, but I live a sugar free/alternative lifestyle. So I had to come up with an alternative way to make this dish. Check out alternative topping using Nuts, and making it with coconut sugar.

Heres the Recipe:
4c Sweet Potato
1 stick Butter
1 tsp Salt
1 Tsp Lemon Juice

Topping:
1c Coconut Sugar
1c Chopped Pecans
1/4c Butter
Dash of Salt
1/2c Dried Coconut Flakes

1. Bake off/Mircowave your sweet potatoes ahead of time. But make sure they are warm before starting this dish.

2. In a large bowl, add the warmed sweet potatoes, butter, salt and lemon juice and blend well with a hand mixer. Pour into a greased casserole dish.

3. Make the topping: In a Medium sized bowl, add the coconut sugar, chopped pecans, butter, salt and dried coconut flakes. Combine with hands or fork, until a crumbly texture. Spread across the top of the casserole.

4. Cover the casserole dish, bake at 350 degrees for 20-25 minutes, then pull the cover and bake another 10 minutes.
