Ingredients: makes 20-24 taquitos
2 pounds thin-sliced beef chuck steak, flank steak or skirt steak
1/4 cup oil
1/4 cup fresh lime juice (about 2-3 limes)
1/4 cup orange juice (about 1 orange)
2 cloves garlic, minced
1/4 cup chopped fresh cilantro
1/2 white onion;sliced
1 tbsp New Mexico chili powder
2 tsp ground cumin
2 tsp garlic powder
2 tsp onion powder
2 tsp black pepper
1 tsp oregano
1 tsp chipotle powder
4 tsp salt or to taste
For the taquitos
Corn tortillas
Oil
4 medium russet potatoes
2 cups queso Oaxaca
1/4 tsp garlic powder
1/2 tsp black pepper
