RECIPE:
Blue butterfly pea flower extract:
15-20 blue butterfly pea flower
1 cup boiling water
Let sit for 15 minutes.
Blue butterfly pea flower coconut rice:
(This recipe is used cook on gas stove method)
2 cups rice, washed and drain
2 1/4 cups water
1 cup coconut milk
1 cup blue butterfly pea flower extract
1 shallot
3 slices ginger
1/2 tsp fenugreek seed
2 pandan leaves
1/2 tsp salt
Chilli paste ingredients:
15-20 dried chilli, soaked & drain
1 onion
3 garlic
2 fresh chili
20g ginger
1/4 cup water
For sambal ingredients:
450g shrimps
1 yellow onion, sliced
1/2 tbsp sugar
1/2 tsp salt
1 tbsp tamarind paste
Water as needed
Topping:
Peanuts
Cucumber
Eggs
Fried anchovies
➡️Gas stove method to cook the nasi lemak:
1. In a pot, add washed rice, 2 1/4 cups water, 1 cup coconut milk, and 1 cup blue butterfly pea flower extract. Add salt, sliced shallots, sliced ginger, and pandan leaves. Stir to dissolve the salt and combine.
2. Bring to a boil over medium-high heat, then lower the heat, cover, and simmer for 15-20 minutes. Turn off the heat, keep the pan covered, and let it rest for 5 minutes to allow the rice to absorb any excess moisture. Fluff the rice and set it aside until ready to use.
➡️Method to make shrimp sambal:
1. In a pan, add 1/2 cup of oil and heat it. Add the anchovies and fry them until crispy and browned. Remove the anchovies and let them cool, then store them in an airtight container.
2. Using the same oil, add the blended chili paste. Sauté the chili paste until it darkens and you see the oil floating on top, a process known as 'pecah minyak' or 'oil splitting' (see note for more information).
3. Add seasoning and cleaned shrimp, and cook for 1-2 minutes before adding the yellow onion. If the sambal is too dry, add water and continue cooking until it thickens. Turn off the heat and the sambal is ready to serve.
➡️To serve the nasi lemak:
Place the blue butterfly pea flower rice on a serving plate, and top it with crispy peanuts, fried anchovies, cucumber, egg, and shrimp sambal. Enjoy
Note:
▪️The chili paste should be cooked properly, a process called 'pecah minyak' or 'oil splitting.' To make the best sambal, keep stirring the chilli paste till the oil floats on top and the paste turns into a darker red color. Do not skip this step if you want a delicious sambal. Additionally, if the chilli paste is not cooked well, it may also cause stomach ache.
▪️ There is a difference between using a gas stove and a rice cooker to cook nasi lemak. Adjust the amount of water based on the type of rice you are using. If using a gas stove, you will need to add more water.
