Brinjal Biryani
Ingredients
Brinjal 400 grams
Warm Milk ¼ Cup
Basmati Rice 2 Cups
Water to Cook Rice 2 Litrs
Peanuts 1 Tbspn
Sesame Seeds 1 Tbspn
Coriander Seeds 1 Tspn
Cloves 10
Cinnamon Sticks 4 inches
Bay leaves 4
Green Cardomom 10
Bay leaves 4-5
Oil 3-4 Tbspns
Gh33 2 Tbspsn
Fried Onions ¼ Cup
Coriander Seeds
Mint Leaves
Lemon Juice
Salt as per Taste
Curd ½ cup
Red Chilly Powder 2 Tbspns
Garam Masala Powder ½ Tspn
Biryani Masala Powder 1 ½ Tspn
Green Cardomon & Star Anise Powder 2 Tbspn
Food Color Pinch
Saffron ¼ Tspn
Shaah jeera 1 Tspn
Procedure
Take a bowl and add ¼ cup of warm milk and add ¼ Tspn of Saffron stands and let the soak in the milk .
Take a bowl of water and add ¼ Tspn of Orage food color.
Take 2 Cups of Basmati Rice and wash them well and soak them for about 15-20 minutes
First wash the brinjal well and put them in the Salt water Cut the brinjals in X. Now Take a Pan and add 1Tbspn of Peanuts, and roast them on low flame, until they slightly changes the color. After take them aside. Now in the Same Pan add 1 Tbspns of Seasame Seeds and Roast the slightly until they changes the color and splatters. Cool these Completely.
Take a Mixer jar and add the cooled Seesame Seeds & Peanuts. Add 1 Tspn of Coriander Seeds, 2 inches Cinnoamon Sticks, 4-5 Cloves, ½ Tspn ShaahjeeraMake into a coarse powder.
Now Wipe the brinjals without wet and Stuff the powder grinded.
In the Same Pan add 2-3 Tbspns of oil and add the brinjals and them cook until they a Soft. It should be observed in the intervals. In the mean while Take a bowl and add ½ Cup of curd and add salt as per taste , 1Tspn of Red Chilly Powder, Biryani Masala 1 Tspn, Green Cardomom & Star NAise Powder ½ Tspn, ¼ Tspn of garam Masala Powder, and mix all of the well/ Now check whether the brinjal are soft or not Once they are Soft add the curd mixture into the pan of brinjal and let the gravy cook until it becomes thick.
Take a big vessels and add 2 lutes of water and add salt until the water tastes as sea salt water. Add 2 Bay leaves, 2 Green Cardomom , 4-5 cloves and 2 inches Cinnamon Sticks, 1 Tspn of Lemon Juic, Some mint leaves and some coriander leaves, add 1Tbspn of Ghee and let it come to boil and add the washed and soaked basmati rice and let the cook for about 90%.
Take a Pan and add Ghee and Grease the Pan with ghee and once the rice is cooked 90%, Take a ladle ull of strained Rice and add to the Pan as the bottom layer. On the top of the rice add soffron milk and food color water and fried Onions and chopped Cilantro and mint leaves and now add the brinjal gravy curry. Now add the remaining rice and and add remaining saffron milk and food color water. On the add mint leaves and cilantro and fried onions and then cover the lid.
Now Put a Iron Tawa on the stove and then place the pan and cook on low flame for about 10-15 minutes. After the Switch off flame Rest it for 10-15 min more . Now its Ready to Serve.
