Sugar is a term that includes all sweet carbohydrates, although the term is most often used to describe sucrose or table sugar.
The human bodies break down carbohydrates into simple sugars such as glucose, that can be readily used in the body. There are several different sugars, but this time I decided to cover a generic white, granulated one I purchased in a local store.

To make refined sugar, raw sugar or sucrose is extracted from plant with naturally occurring sugars, which then undergoes processing to remove molasses. The most common type of refined sugar is table/white sugar, which I just chose for this analysis. So, this sugar, is basically a sucrose: a molecule composed of 12 atoms of carbon, 22 atoms of hydrogen, and 11 atoms of oxygen. Like all compounds made from these three elements, sugar is a carbohydrate. Sugar is form of energy human body needs to fuel its processes. Human body breaks down carbohydrates and converts them into a simple sugar called glucose. This ready form of energy is carried through the blood and delivered to every cell. Unlike the white sugar which is the subject of this analisis, a naturally occurring sugar which comes with fruits, vegetables and nuts poses no threat to the human body as our bodies are designed to extract and convert sugar compounds into pure energy portions.

In a sugar crystal, the sucrose molecules are arranged in a repeating pattern that extends in all three dimensions, and all of these molecules are attracted to each other by intermolecular forces. While sugar crystals look a bit like hexagonal pillars that have fallen over, they actually have a monoclinic form, which could end up as asymmetric hexagonal pillars.
To compare, salt crystals, have the habit of forming cubes.

This sugar looks white, because sucrose is white. Measured albedo value of this exact sugar in 0-255 PBR range and sRGB was R239, G237, B230 with relative luminance level at 0.929.
As usual, to better understand light response when it illuminates the surface, I captured it in different magnification levels.
