🍃 Ingredients:

🔸 For the Pesto Sauce:
• ¼ cup toasted nuts (cashews, almonds, or walnuts)
• 2 cups fresh basil leaves
• 4 cloves garlic
• 1 tsp black pepper
• Salt, to taste
• 1 tbsp extra virgin olive oil
• Juice of ½ lemon
• ½ cup blanched spinach (steamed & cooled)
• 100g low-fat paneer, cubed or crumbled
• Water, as needed (for consistency)

🔸 For the Pasta:
• 1 cup pasta (or any pasta of choice)
• Salt (for boiling water)

🔸 For the Topping / Stir-Fry:
• 1 tsp oil
• ¼ cup cherry tomatoes, halved
• ¼ cup sweet corn
• Optional: chili flakes, mixed herbs, crunchy garlic

🍳 Instructions:
1. Prepare the Pesto Sauce:
• In a blender, combine basil, garlic, nuts, pepper, salt, olive oil, lemon juice, spinach, and paneer.
• Add water gradually and blend until smooth and creamy. Set aside.
2. Cook the Pasta:
• Boil pasta in salted water until al dente (firm to the bite). Drain and keep aside.
3. Sauté the Veggies:
• Heat oil in a pan.
• Add cherry tomatoes and corn. Sauté until slightly charred or softened.
4. Cook the Sauce:
• Pour the prepared pesto sauce into the pan.
• Cook on medium heat, stirring frequently. Add a splash of water if it thickens too much.
• Let the sauce cook for a few minutes to enhance the flavor and integrate the paneer properly.
5. Toss in Pasta:
• Add the boiled pasta to the pan.
• Toss well to coat evenly. Heat for another 1–2 minutes.
6. Garnish & Serve:
• Top with chili flakes, mixed herbs, and crunchy garlic.
• Serve hot!
