1 salmon Fillets
2 Tbsps. olive oil, divided
2 Tbsps. butter
1 Tbsp. freshly squeezed lemon juice
1 Tbsp. Cajun Seasoning
1/2 tsp Old Bay seasoning
1/2 tsp smoked paprika
1/4 tsp cayenne pepper
1 tbsp. hot sauce
ground black pepper to taste

For the grits:

1 cup quick cooking grits or polenta
2 cups broth ( chicken or vegetable)
2 Tbsp. unsalted butter
1/2 cup half and half
1 cup shredded smoked gouda
salt to taste
ground black pepper tp taste
