What happens when American fast meets an authentic Thai red curry paste? Something delicious happens!

In this video, I show how to make a basic hand pounded red curry paste, then we will walk through a simple popcorn chicken recipe that yields crispy golden chicken. Finally, we'll mix the curry paste with some butter to create a Thai 'buffalo' sauce for the fried chicken pieces.

~ Recipe ~

█ Popcorn Chicken █

• 4 boneless, skinless chicken thighs

Batter:
• 1 TBSP soy sauce
• 1 TSP Salt
• 1 TSP Pepper
• 1 Egg, beaten
• ½ cup corn starch

Breading:
• 1 Cup flour, mixed with salt & pepper (or other spices

• Oil for frying (I use avocado)

Dice the chicken thighs into bite size pieces. In a large bowl, add the soy sauce, salt, pepper, and egg. Stir to combine. Add the cornstarch by the spoonful until a rough batter forms.

Add the flour to a large ziplock bag. Drop the battered chicken into the bag and shake until the outside is completely coated. Make sure there are no dry spots.

Heat the oil to 350-375 Degrees. Drop the chicken in one by one. Fry until the chicken is golden brown and starts to float.

Drain on a paper towel and enjoy!

█ Thai Red Curry Paste █

(About ½ cup of each herbaceous ingredient)

4 Spur Chilis, soaked
Pinch of salt
1 bunch Cilantro stems
2 stalks Lemongrass, diced
2 thumbsize knobs ofGalangal
6 cloves Garlic
4 Thai shallots

Dice or roughly chop all of the ingredients into smaller pieces. Add the soaked chilis and salt to the mortar & pestle and ground into a paste. Proceed to add the rest of the ingredients one by one and ground into the paste.

*NOTE*: Completely break down one ingredient before adding the next one!

It will take some time (took me 30 minutes) to get it into a nice paste, so be patient. Throw on some good music or Netflix!

To make the thai 'buffalo' sauce, melt some butter on medium low heat and add a spoonful of the red curry paste. Toss with the popcorn chicken to serve!
