Recipe for Special Bangalore Mutton Donne Biryani:
Ingredients:
For Mutton:

500g mutton, cut into medium-sized pieces
1 cup yogurt
1 teaspoon turmeric powder
1 tablespoon ginger-garlic paste
Salt to taste
For Rice:

2 cups basmati rice (washed and soaked for 30 minutes)
1 cinnamon stick
3-4 cloves
2 cardamom pods
1 bay leaf
1-2 green chilies (slit)
1 tablespoon ghee
For Biryani Masala:

1 teaspoon cumin seeds
1 teaspoon fennel seeds
1 tablespoon coriander powder
1 teaspoon garam masala

Other Ingredients:

2 onions, thinly sliced and fried until golden brown
2 tomatoes, chopped
1 tablespoon lemon juice
Fresh coriander and mint leaves for garnish
Steps:
Marinate the Mutton:

Marinate the mutton with yogurt, turmeric, ginger-garlic paste, and salt.
Let it sit for at least 1-2 hours or overnight in the fridge for best results.
Prepare the Rice:

Cook the Mutton:

In a heavy-bottomed pan or pressure cooker, heat oil and fry the marinated mutton until browned.
Add tomatoes, cover, and let it cook on low heat until the mutton is tender. Add some water if needed to avoid burning.
Add the biryani masala (cumin, fennel, coriander, garam masala, chili powder, and pepper) and mix well. Two to three whistles

In the same pan or cooker ,add the rice on top of the mutton.
Drizzle with lemon juice and ghee.
Cover the pot with a tight lid and cook on low heat (dum) for about 20-30 minutes until the rice is fully cooked and has absorbed the mutton’s flavors.
Serve:

Fluff the rice gently, making sure not to break the grains.
Serve hot with raita and a side of your choice.
