DAHI VADI

CHEF AANAL KOTAK
INGREDIENTS:
• 1 cup Besan (gram flour)
• 3 cups Buttermilk
• 2 tbsp Oil
• 1 tsp Mustard Seeds
• 1 tsp Cumin Seeds
• ¼ tsp Asafoetida (Hing)
• 1 tsp Curry Leaves (roughly chopped)
• 1 tsp Green Chilli (finely chopped)
• 1 tbsp Ginger (finely chopped)
• 1 cup Onion (finely chopped)
• Salt to taste
• ½ tsp Turmeric Powder
• ½ tsp Red Chilli Powder
• 1 tsp Coriander Powder
• 1 tsp Cumin Powder
• 1 tsp Sugar
• ¼ cup Coriander Leaves (chopped)
• 1 tbsp Oil (for tempering)
• Sesame seeds for garnishing

METHOD TO PREPARE THE BATTER
• In a large mixing bowl, combine 1 cup of besan and 3 cups of buttermilk.
• Whisk thoroughly until the mixture is smooth and lump-free. Set aside.
• Heat oil in a pan over medium heat.
• Add mustard seeds and cumin seeds. Let them crackle.
• Add asafoetida, roughly chopped curry leaves, green chilli, and ginger.
• Sauté for a minute, then add onion.
• Cook the onions until soft and translucent.
• Add salt to taste, ½ tsp turmeric powder, red chilli powder, coriander powder, and cumin powder. Mix well.
• Pour the besan-buttermilk mixture into the pan with the tempered spices and onions.
• Stir continuously to avoid lumps and cook on a low to medium flame for 10-12 minutes. The mixture should thicken and start leaving the sides of the pan.
• Once thickened, add sugar, coriander leaves, and 1 tbsp oil. Stir well for a few seconds.
• Close the lid and let it cook on a low flame for 5 more minutes.

SHAPE THE VADIS
• Grease a flat plate or tray with oil.
• Pour the cooked mixture onto the plate and spread it evenly using a spatula and garnish with sesame seeds on it.
• Let the mixture cool and set for 20-30 minutes.
• Once cooled and set, cut into square or diamond-shaped vadis.
• Sprinkle freshly chopped coriander leaves over the vadis.
