Ingredients for Hyderabadi Mutton Fry:

Mutton- 500 gms (with bones or boneless)

Pressure Mutton cook with:
Turmeric Powder- 1/2 tsp
Red Chilli Powder- 2.5 tsp
Salt- 1 tsp
Ginger Garlic paste- 3 tsp
Oil- 2 tbsp
Water- 150 ml

Other Ingredients:
Groundnut Oil- 1.5 tbsp
Garam Masala Powder- 1/2 tsp
Coriander leaves, chopped- 3-4 tbsp
Curry Leaves, chopped- 3 tbsp
Green Chillies, sliced- 2

Preparation:

Chop the coriander and curry leaves & slice the green chillies just before frying the mutton.

Process:

Take a pressure cooker and add the boneless mutton pieces.
Now add the Turmeric and Red Chilli powder, salt, Ginger garlic paste, oil and 150 ml water. Give a mix. Pressure cook the mutton for 4 whistles till meat is tender.(To pressure cook the mutton, cook on high heat till the 1st whistle and then reduce to low heat for another 3 whistles. Switch off heat and allow the cooker to release heat on it’s own. Should take a total of 15 mins)
After the pressure is released, dry out any excess water on high heat for around 3-4 mins.
Do not dry out the entire water, around 1 cup of gravy should remain, will get dried up while frying.
To fry the mutton, now take a frying pan and heat the groundnut. Now add the boiled mutton with the gravy, give a mix and add the Garam Masala.
Mix and fry the mutton on high heat for around 6-7 mins till the gravy nearly dries up.
Now add the chopped coriander and curry leaves & sliced green chillies.
Give a mix and fry 2 mins on high heat till the mutton is fried and the gravy and the green herbs coat the mutton pieces.
