These are fast, delicious and healthy! High protein, low carb, gluten free, dairy free....light and fluffy! If you're gluten sensitive, I think you're really going to love these!

Recipe Below-
Preheat Oven to 400 degrees (makes 6 biscuits)
Shopping List
Almond flour (you'll need 2 1/4 cups of ultra fine, not almond meal)
Dairy Free Spread (you'll need 1/4 cup cold. Earth Balance is a good choice, although any butter or spread will work in this recipe)
Baking powder (you'll need 1Tbsp, look for one that says gluten free on the label. I used a gluten free and sodium free baking powder)
Kosher salt
Eggs (you'll need 3)

Dry Ingredients:
To mixing bowl add 2 1/4 cups almond flour, 1 Tbsp GF baking powder, 1/2 tsp salt, 1/4 cup cold butter or dairy free spread. Using a pastry cutter, chop butter into flour mix until coarse.
Wet Ingredients:
In separate bowl beat 3 eggs.
Mix dry ingredients into wet, blend until combined. Let batter rest for 5 minutes.
Spray non-stick cooking spray on 6 muffin cups. This will make 6 large biscuits instead of 12 smaller. If you decide to make 12 smaller, adjust your cooking time.
Fill each cup evenly with mixture. Use a spatula to shape muffins with a small mound in the center.
Bake at 400 degrees for 16-18 minutes or until toothpick comes out clean and muffins are golden on top

Cool for 5 minutes before removing from pan
Keep in fridge for 4-5 days....or freeze up to 2 months
