Think of it like this—a perfect crab cake sitting right on top of a juicy shrimp. I’m showing you how to make it step by step, and trust me, it’s easier than you think.

We’re working with lump crab, some Blue Magic batter (you already know what it is), and my go-to ingredients to get this dish just right. I’ll even share the secret to keeping your shrimp flat and perfect for stuffing. Plus, I’ve got tips for making this at home, even if you’re new to the kitchen.

Ingredients:

8 oz lump crab meat
1 egg
1 lemon (for juice)
1 tsp Dijon mustard
2-3 tbsp breadcrumbs (adjust as needed)
1 tbsp mayonnaise (preferably Cy Mayo)
Optional: 1 tbsp chopped parsley or cilantro
Large shrimp, peeled and deveined
Blue Magic batter (or your preferred wet batter)
Oil for frying

Step-by-Step Instructions:

*1. Prepare the Crab Cake Mixture:*
Add 8 oz of lump crab meat to a mixing bowl.
Crack one egg into the bowl.
Squeeze fresh lemon juice into the mixture, ensuring no seeds get in.
Add 1 teaspoon of Dijon mustard, 1 tablespoon of mayonnaise, and 2-3 tablespoons of breadcrumbs.
If desired, mix in 1 tablespoon of chopped parsley or cilantro.
Gently combine the ingredients, being careful not to shred the crab meat.

*2. Prepare the Shrimp:*
Peel and devein the shrimp.
Make 4-5 shallow cuts along the back of each shrimp to keep them flat while cooking.
Press each shrimp down gently to flatten it further, creating a surface for the crab cake.

*3. Assemble the Stuffed Shrimp:*
Take a small portion of the crab cake mixture and place it on top of each flattened shrimp.
Press the mixture gently to ensure it adheres to the shrimp.

*4. Chill the Stuffed Shrimp:*
Place the stuffed shrimp on a tray and freeze them for about 30 minutes. This helps the crab mixture stay intact during frying.

*5. Coat in Batter:*
Prepare your wet batter (Blue Magic or your preferred choice).
Dip each stuffed shrimp into the batter, ensuring the crab mixture is coated while keeping the tail clean.

*6. Fry the Stuffed Shrimp:*
Heat oil in a deep fryer or pan to 350°F (175°C).
Fry the stuffed shrimp until golden brown and crispy, about 3-5 minutes per batch.
Remove and place on a paper towel-lined tray to drain excess oil.

*7. Serve:*
Serve hot and enjoy with your favorite dipping sauce or on their own.
