This dish is popular side dish served at many Korean restaurants. It is sweet, savory and creamy. When I was growing up in Korea, my mom packed this for my lunch as a side dish. This recipe has perfect balance of sweet and savory flavor. It can be a quick meal with rice.


*When stir frying the potatoes, coat every side with oil. It keeps the potatoes from being mushy at the end. Keep the lid on. It makes the cooking process faster.

*Cook potatoes with lid on for about 6 to 7 minutes. Then add carrots and onions and cook for another 5 minutes with lid on. Cook additional 15 minutes with lid off until the sauce is reduced. The end result is crisp, tender potatoes, carrots, and onions.



Ingredients:

2 potatoes (about 18 oz), cut in 1 inch chunks
1 carrot, cut diagonally into 1 inch chunks
1/4 onion, cut into 1 inch pieces
1 red chili pepper, cut diagonally (optional)
1 green chili pepper, cut diagonally (optional)
1/2 tbsp sesame oil
Sesame seeds


Sauce:

3 tbsp low sodium soy sauce
3 tbsp Mirim, cooking wine
1 tbsp oligodang, cooking syrup
2 tbsp sugar
