Strawberry Iced Oatmeal Cookies:

Oatmeal Cookies
¾ cup all-purpose flour
1 ½ teaspoons cinnamon
½ teaspoon baking soda
¼ teaspoon salt
½ cup butter, softened
¼ cup granulated sugar
4 tablespoons light brown sugar, packed
1 tablespoon molasses
1 large egg
1 teaspoon vanilla extract
1 ¼ cups quick-cooking oats

Strawberry Icing
1 cup powdered sugar
1–2 tablespoons strawberry powder (start with 1 and adjust to taste)
2–4 tablespoons milk (add gradually for desired consistency)

Instructions:
Preheat oven to 350°F and line a baking sheet with parchment paper.In a bowl, whisk together flour, cinnamon, baking soda, and salt.
In a separate bowl, cream butter with brown sugar and granulated sugar until smooth. Mix in egg, vanilla, and molasses until fully combined. Gradually add dry ingredients, then fold in oats.
Scoop dough onto the baking sheet, spacing cookies a few inches apart. Bake for 10–12 minutes, until edges are set but centers remain soft. Let cookies cool completely.
To make the icing, whisk powdered sugar, strawberry powder, and milk until smooth and pourable. Spoon or drizzle icing over cooled cookies and allow to set before serving.
