Ingredients

2 medium sweet potatoes (approx. 500g), peeled and cubed
250g ricotta cheese
1 tablespoon cumin seeds
50g walnuts, roughly chopped and pan-roasted
1 garlic clove, minced

2 roasted red peppers (from a jar, drained)
1 medium onion finely chopped
3 garlic cloves, chopped
1 tablespoon tomato purée
1 teaspoon balsamic vinegar
1 teaspoon dried Italian herbs

50g Grana Padano, finely grated or enough to cover the top
