Today I'll be showing you How to cook sirloin steak medium rare in the pan.

Simple Sirloin Steak Recipe (Medium-Rare)

Ingredients:
1 sirloin steak, at room temperature (let it sit out for 30-60 minutes)
Rock salt or table salt
Freshly ground black pepper
15 ml (1 tablespoon) oil or beef fat.
Butter
1 sprig of rosemary
1 sprig of thyme
Garlic cloves, crushed

Instructions:
1. Season the Steak: Liberally season both sides of the steak with salt and freshly ground black pepper.
2. Heat the Pan: Place a pan on high heat. Add the 15 ml (1 tablespoon) of vegetable oil.
3. Sear the Steak: Once the pan is hot, carefully place the steak in the pan. Sear for 1 minute on each side. The goal is to get a nice caramelised crust.
4. Add Flavor and Baste: After searing, reduce the heat slightly. Add a few knobs of butter, the sprig of rosemary, the sprig of thyme, and the crushed garlic cloves to the pan.
5. Cook to Temperature: Using a spoon, baste the steak with the melted butter and pan juices. Continuously check the internal temperature of the steak with a meat thermometer. The target temperature for medium-rare is 55-60°C (130-140°F).
6. Rest the Steak: Once the steak reaches an internal temperature of 50°C (122°F), remove it from the pan. The residual heat will continue to cook it to the desired temperature.
7. Serve: Let the steak rest for about 5 minutes before slicing and serving.
