Hollywood's restauranteur Michael Romanoff, left us many classic recipes like strawberries romanoff, but noodle romanoff was pervasive, appearing as a side on most of the restaurant dishes. It's super creamy, tangy and with a sharpness from the scallions that makes it addictive. Surprisingly it super simple to make. It's basically macaroni and cheese in a pot. While there are many versions of this recipe, many stemming from eastern europe, I think this one is the best. It's way less casserole and far more elegant dining. Just image yourself, in a smoke filled Hollywood restaurant, surrounded by golden era Hollywood stars like Clark Gable, Jane Mansfield and more, chowing down on noodles romanoff. Just make it.

In a pot of boiling salted water, cook 4oz of egg noodles. While they're cooking chop up 2 scallions, grate 1/3 cup parmesan cheese and chop 1 tablespoon fresh chives. Once the noodles are cooked, drain them and return them to the pot. Now add 1 tablespoon butter and 1/2 cup sour cream along with the scallions, parmesan cheese and chives. Stir until the cheese had melted and becomes creamy. Lastly add in 1/4 teaspoon garlic powder, 1/8 teaspoon salt and 1/8 teaspoon pepper. Give it one last stir and serve. I like to garnish it with some more scallion and chives. Chow down.
