Ingredients:
- Buffalo or Beef Meat (Bade ka Gosht): 1 kg, cut into medium-sized pieces
- Onions: 4 large, finely sliced
- Tomatoes: 3 medium, finely chopped
- Ginger-Garlic Paste: 2 tablespoons
- Yogurt (Curd): 1/2 cup, whisked
- Oil or Ghee: 1/2 cup
- Red Chili Powder: 1 tablespoon (adjust to taste)
- Turmeric Powder: 1 teaspoon
- Coriander Powder: 1 tablespoon
- Garam Masala: 1/2 teaspoon
- Whole Spices:
- Bay Leaves: 2
- Cloves: 5-6
- Black Cardamom: 1
- Cinnamon Stick: 1 inch
- Black Peppercorns: 6-8
- Green Chilies*: 2-3, slit lengthwise
- Coriander Leaves: for garnish, chopped
- **Salt**: to taste
- **Water**: as needed for cooking



To make Bade ke Gosht ka Salan, start by heating oil or ghee in a heavy-bottomed pot. Add the whole spices—bay leaves, cloves, black cardamom, cinnamon stick, and black peppercorns—and sauté until they release their aroma. Then, add the sliced onions and cook until golden brown.

Next, incorporate the ginger-garlic paste and sauté until the raw smell disappears. Add the buffalo or beef meat and cook on high heat until it is seared on all sides. Mix in the red chili powder, turmeric powder, coriander powder, and cumin powder, stirring well to coat the meat with the spices.

Add the chopped tomatoes and cook until they soften and the oil starts to separate. Then, lower the heat and add the whisked yogurt, stirring continuously to prevent curdling. Once the yogurt is well incorporated, add water as needed to form a thick gravy.

Cover the pot and let the meat simmer on low heat until it is tender and fully cooked. Adjust the seasoning with salt, and add garam masala and slit green chilies towards the end. Garnish with fresh coriander leaves before serving.

Bade ke Gosht ka Salan pairs wonderfully with naan, roti, or steamed rice, making it a comforting and satisfying meal.
