Components of food and their role in the body
भोजन के घटक और शरीर में उनकी भूमिका
Carbohydrates- simple sugar- glucose, fructose and their chemical properties. Complex carbohydrates- starch, cellulose and their digestion.
कार्बोहाइड्रेट- सरल शर्करा- ग्लूकोज, फ्रुक्टोज और उनके रासायनिक गुण। जटिल कार्बोहाइड्रेट- स्टार्च, सेल्यूलोज और उनका पाचन।
Proteins- amino acids as building blocks of proteins, protein structure primary, secondary, tertiary and quarternary, denaturation of protein and its application in cooking.
प्रोटीन- प्रोटीन के निर्माण खंड के रूप में अमीनो अम्ल, प्रोटीन संरचना (प्राथमिक, द्वितीयक, तृतीयक और चतुर्थक), प्रोटीन का विकृतीकरण और खाना पकाने में इसका अनुप्रयोग।
Lipids/ fats- triglyceride, phospholipids, cholesterol, mono saturated and poly saturated fatty acids, role of fats in cell membrane and hormone production
लिपिड/वसा- ट्राइग्लिसराइड, फॉस्फोलिपिड, कोलेस्ट्रॉल, मोनोसैचुरेटेड और पॉलीसैचुरेटेड फैटी एसिड, कोशिका झिल्ली और हार्मोन उत्पादन में वसा की भूमिका।
Vitamins- classification of vitamins, water soluble and fat soluble, chemical structure and function of key vitamins- vitamin C, vitamin A, vitamin D, vitamin B complex.
विटामिन- विटामिनों का वर्गीकरण, जल में घुलनशील और वसा में घुलनशील, प्रमुख विटामिनों की रासायनिक संरचना और कार्य- विटामिन सी, विटामिन ए, विटामिन डी, विटामिन बी कॉम्प्लेक्स।
Minerals- essential minerals- calcium, iron, sodium, potassium etc. mineral bioavailability and factors affecting absorption
