On my last weekend in Delhi, I visited Humayun's Tomb with my friend, Edgard. This is a World Heritage Site that has been supported by the Aga Khan Foundation, and well worth a visit. Edgard mentioned that the Sunder Nursery was next door (also a World Heritage Site), and that we should have lunch there at FabIndia’s concept restaurant in the park. After lunch, strolling around the Nursery, I stumbled upon The Earth Collective Weekend Market, and I immediately realized that I had found my people! These folks were passionate about food and healthier eating. Among the vendors, I struck up a conversation with Karan from Darkins Chocolate, and given the alignment of our interest, he invited me to visit their factory and were welcome to the idea of me creating a video, which I readily accepted.

Darkins Chocolate is an artisanal chocolate maker located in Delhi, but it is so much more. In their support for the local cocoa industry and the flavours that they are exploring, with a few exceptions, they are striving for making the best possible Indian product. This is actually one of the most complete bean-to-bar local chocolate experiences I have experienced (outside of Trinidad and Tobago). But beyond that, they connect their chocolate to a farm-to-table experience by hosting chocolate themed dinners where they push the boundaries of incorporating their product in Indian cuisine. Like I said, my people. When I was tasting their products in the video, I was appreciative of the provocative brain candy their chocolate was delivering. Superb is an understatement.
