PUMPKIN PARFAIT INGREDIENTS (3 servings)
1 cup Pumpkin puree
6 pitted dates
1/3 cup of quick oats
1/2 teaspoon cinnamon
2 tablespoon coconut milk + one extra
YOGURT MIXTURE
1 cup of greek yogurt(could be vanilla flavor or plain)
1 1/2 tablespoons of honey or maple syrup (this is optional if you use plain yogurt)
2 tablespoons of coconut chips
4 tablespoons of coconut cream
1 1/2 tablespoon of peanut butter(or almond)
1/2 teaspoon cinnamon

1 cup of raspberries(or your favorite fruit)
PREPARATION
Place in a blender pumpkin, dates, oats, cinnamon and coconut milk. Depending on the texture of the dates, you might add and extra tablespoon of coconut milk. Mixture must be cohesive and thick. Set this apart.
Next, in a bowl, mix all remaining ingredients: yogurt, honey, coconut chips, peanut butter, and cinnamon. Assemble in a glass one layer of the yogurt mixture, fruit of your choice, pumpkin mixture, fruit, and another layer of yogurt. Use the remaining of fruit on the top and serve. Buen apetito!.
