Recipe / Tohu tumu
Te Mīti Kōnatunatu
1 – 1½ kapu pīhi wōnati
1½ kapu pīni pakupaku (1 tīni rānei, he mea tatari)
1 aniana
1 kāreti
1 kakau herewī
2-3 pīhi kāriki
tote me te pepa
1 tīni tomatoes

Kia kotikotia ngā hua whenua nunui (ki te tāwhirowhiro)
Paraitia.
Āpititia ngā wōnati. (Ki te hiahiatia kia mōhungahunga te “mīti”, me kotikoti ngā wōnati.)
Āpititia ngā kāriki, te tote me te pepa, me te tīni tomato.
Tunua kia ngohehohe. Waiho kia mātaotao.


The Mince
1 – 1½ cups of walnuts
1½ cups of lentils (or one tin, drained)
1 onion
1 carrot
1 celery stalk
2-3 garlic bulbs
salt and pepper
1 tin of tomatoes

Chop up the large vegetables (with a food processor)
Fry it.
Add the walnuts. (If a finer mince is desired, chop up the walnut pieces)
Add the garlic, salt & pepper, and tinned tomatoes.
Cook till tender. Then leave to cool.

Te Pōhā
2 kapu parāoa mā
1½ kapu parāoa parāone
1 tīpune tote
1 tīpune pēkana paura
1/3 kapu hinu.
1 pune-nui kurutene (ki te pīrangitia)
1 kapu wai wera

Whakaranua ngā kīnaki maroke me te hinu, ka āpiti ai i te kapu wai wera.
Mehemea he maroke rawa te pōhā, āpititia he paku wai anō.
Kia āhua whā meneti te pokepoke.

The Pastry
Two cups of white flour
One-and-a-half cups of wholemeal flour.
One teaspoon of salt
One teaspoon of baking powder
A third [cup] of oil
And a tablespoon of gluten will be added, to improve the pastry.
1 cup of hot water.

Mix the dry ingredients with the oil, then add the cup of hot water.
If the dough is too dry, add a little more water.
Knead for about four minutes.

He hanga i te pae
Wehea he hauwhā o te pōhā (mō te pae kotahi)
Wehea taua hauwhā, kia rua ngā haurua.
Whakapapatahitia ngā haurua e rua, kia āhua ōrite ki te nui o te parai.

Making the pie.
Take a quarter of the dough (for one pie.)
Divide the quarter into two halves.
Roll out each half to about the size of the pan.
Lay a layer of mince on one of the dough circles.
Add some vegan cheese, and hot sauce, if desired.
Lay the other dough circle on top and join the edges.
Fry on both sides till golden.
