Double Chocolate Skillet Cookies Recipes

☞ Pan Size: 12x12x2cm cast iron skillet
☞ Yields: 2

✎ Ingredients
unsalted butter 60g, room temperature
brown sugar 35g
granulated sugar 15g
rum 4g
egg 28g, room temperature
all purpose flour 65g
baking powder 1g
coarse salt 1g
64~70% chocolate chips 80g
Oreo cookies 5 pieces, remove filling

✎ Instructions
1. Grease the cast iron skillet with butter.
2. Remove the filling of Oero cookies, and break all of them into 5-6 small pieces, set aside.
3. Sift the flour and baking powder together, then add coarse salt and mix well.
4. Using a hand mixer, cream the unsalted butter with the brown sugar and granulated sugar over medium-low speed for about 2-3 minutes until combined.
5. Add rum and egg, whisk over medium-low speed  until all combined.
6. Add the flour and baking powder over low speed until the dough comes together. Use the spatula to mix well.
7. Add chocolate chips and Oreo cookies, mix until well combined.
8. Scrape the dough into the skillet until 2/3 full.
9. Preheat the oven to 200°C, baking for 13-15 minutes or until golden brown.
10. Once Baked, serve topped with ice cream. Enjoy.
