COOKING AND PREPARATION PROCESS

PREPARATION TIME:-20 MINUTES
COOKING TIME:- 20 MINUTES
TOTAL TIME NEEDED:- 30 MINUTES

Ingredients

1. Onion medium size - 3
2. Tomato medium size - 2
3. Chickpeas - 400 gm
4. Garlic - 15 cloves
5. Ginger - 1 inch *For Tadka and Paste
6. Green chilies - 4 prices ( Don't use much Spicy Green Chilly)
7. Salt to taste
8. Cumin Seeds - Optional
9. Black Pepper Seeds - 1/2 tablespoon
10. Dried Red Chillies - 2 piece
11. Large Cinnamon - 1 piece / 1inch
12. Cloves - 3 pieces
13. Black cardamom - 1piece
14. Green cardamom - 3 pieces
15. Bay leaves - 2 pieces
16. Star anise - 2 pieces
17. Tea leaves - 2 tablespoon
18. Baking soda - 1/2 tablespoon
19. Mustard oil - 3-4 tablespoon
20. Chole masala - 2 tablespoon
21. Turmeric powder - 1/2 tablespoon
22. Cumin powder - 1/4 tablespoon
23. Red chilli powder - 1/2 tablespoon
24. Coriander powder - 1 tablespoon
25. Kasuri Methi
26. Coriander leaves
27. Desi ghee - 2 tablespoon
28. Asafoetida - 1/4 tablespoon

1. मध्यम आकार का प्याज - 3
2. मध्यम आकार का टमाटर - 2
3. चना - 400 ग्राम
4. लहसुन - 15 कलियां
5. अदरक - 1 इंच * तड़का और पेस्ट के लिए
6. हरी मिर्च - 4 दाम (ज्यादा तीखी हरी मिर्च का प्रयोग न करें)
7. स्वादानुसार नमक
8. जीरा - वैकल्पिक
9. काली मिर्च के बीज - 1/2 टेबल स्पून
10. सूखी लाल मिर्च - 2 पीस
11. बड़ी दालचीनी - 1 टुकड़ा / 1 इंच
12. लौंग - 3 टुकड़े
13. काली इलायची - 1 टुकड़ा
14. हरी इलायची - 3 टुकड़े
15. बे पत्ती - 2 टुकड़े
16. चक्र फूल - 2 टुकड़े
17. चाय पत्ती - 2 बड़े चम्मच
18. बेकिंग सोडा - 1/2 टेबल स्पून
19. सरसों का तेल - 3-4 बड़े चम्मच
20. छोले मसाला - 2 बड़े चम्मच
21. हल्दी पाउडर - 1/2 टेबल स्पून
22. जीरा पाउडर - 1/4 टेबल स्पून
23. लाल मिर्च पाउडर - 1/2 टेबल स्पून
24. धनिया पाउडर - 1 बड़ा चम्मच
25. कसूरी मेथी
26. धनिया पत्ती
27. देसी घी - 2 बड़े चम्मच
28. हींग - 1/4 टेबल स्पून

Cooking Process

Take 3 medium size onion and chop it (Finely chopped).
Take 2 medium size tomatoes and make a fine puree.
In this recipe , I have taken 400 gm of Chick peas and Soaked it in Water for 8-10 hours (Also you can soak 1/2 an hour in hot water).
Take 15-16 cloves of garlic, 1/2 inch ginger and 2 green chilies make a paste with in a Mortar Pestle.

Take a pressure cooker put the soaked chick peas , 1 tablespoon salt and 4 cloves of garlic into it then, keep it on a side.
Take a Saucepan add 2 cup of water then add 1/2 tablespoon Black Pepper Seeds, 2 Dried Red Chillies, 1 large Cinnamon , 3 Cloves, 1 Black Cardamom, 3 Green cardamom, 2 bay leaves and 2 star anise then cover it and boil it for 10 minutes.
Then add 2 tablespoon of tea leaves then cover it for another 2 minutes
Then take a tea strainer put the water part in the pressure cooker then
add 1/2 tablespoon of baking soda ( It make a reaction and provide more heat to cook the chick peas faster).
Boil it for 10 minutes in High Flame.

Take a Kadai let it hot then add 3-4 tablespoon of mustard oil let it hot
Then add the chopped onions, Saute it at low heat up to 10 minutes make it light brown.
Add the Paste of Ginger, Garlic and green chilies then mix it well and cook it for 2 minutes
Add 3 tablespoon of readymade Chole masala powder ( you can made it at home. If you need the making process then write in the comment section, I will make an another video for this.) mix it well
Add 1/2 tablespoon of turmeric powder, 1/4 tablespoon of cumin powder, 1/2 tablespoon of red chilli powder and 1/2 or 1tablespoon of Coriander powder then mix it well and fry it for 2 minutes at low heat (don't put water in this time)
Add the tomato puree and 1/4th of salt and mix it well and fry it for 5 minutes then put the boiled Chole with the boiled water into the pan then mix it properly then cover the lid .
After 5 minutes open the lid then add some roasted Kasuri Methi crushed by your hand and finely chopped coriander leaves then keep it in a side.

For tadka, take a pan add 2 tablespoon of Desi ghee let it hot at low flame then add 1/2 inch Ginger with long cut, two green chilies, 1/4 tablespoon of asafoetida then fry it and put the tadka into the chole Masala.
