My older brother Tesfa lives for a good falafel wrap, so I (Kassa Small) had to put my homemade vegan falafel recipe to the test! These falafels are crispy on the outside, fluffy on the inside, and packed with bold flavors. Wrapped up with creamy tahini, fresh tabbouleh, spicy amba, and smooth hummus, this might just be the ultimate falafel wrap. But the real question is—will my falafel-loving, non-vegan brother approve?
Recipe Overview:
Dish: Falafel Wraps
Accompaniments: Tahini sauce, amba sauce, tabbouleh, pickled onions, hummus, and warm pita bread.
Perfect for: Weeknight dinners, packed lunches, picnic outings, or a party platter.
Ingredients:
Falafel Balls:
2 cups soaked dry chickpeas (not cooked or canned)
1 onion
2 garlic cloves
1/2 bunch of fresh parsley
1 handful of cilantro
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon baking soda
Oil for frying
Hummus Recipe:

Tahini Sauce:
1/2 cup tahini
3 garlic cloves
1 lemon
1 tablespoon soy sauce
3 tablespoons olive oil
1/4 to 1/2 cup water (adjust for desired consistency)
Amba Sauce:
1 mango
2 red Thai chilies (1 for less spicy, 3 or 4 for more spicy)
2 garlic cloves
2 tablespoon apple cider vinegar
1 tablespoon oil
1/2 teaspoon fenugreek
1/2 teaspoon mustard seed
1/2 teaspoon cumin seed
1/2 teaspoon coriander seed
1 teaspoon turmeric
1 teaspoon paprika
2 teaspoon salt
1/2 cup water
Tabbouleh:
1 bunch fresh parsley
1/2 cup bulgur wheat
1 cup water
1 lemon
3 tablespoons olive oil
1/2 red onion
1 tomato
1/2 cucumber
1 handful fresh mint
1/2 teaspoon salt
1/2 teaspoon black pepper
Quick Pickled Onions:
1/2 red onion
1 lime
1 splash vinegar
3 pinch sumac
1 pinch salt
Pita Bread:
2 cups all-purpose flour (300g)
1 teaspoon salt
1 tablespoon sugar
1 tablespoon instant yeast
1 cup warm water
Olive oil for coating
Step-by-Step Instructions:
Falafel:
1) Prepare the Mixture: In a food processor, combine ingredients. Blend until the mixture is coarse but holds together when pressed.
2) Let mixture sit to rest.
3) Shape the Falafel: Form small balls or patties, about 1.5 inches in diameter.
4) Fry the Falafel: Heat oil in a deep pot over medium heat. Fry falafel in batches for 2-3 minutes until golden brown. Remove and drip drain.
Hummus:

Tahini Sauce:
1) Combine in highspeed blender and blend until smooth.
Amba Sauce:
1) In a small saucepan, combine ingredients.
2) Cook over low heat, stirring occasionally, until the flavors meld. Remove from heat and let cool.
3) Blend into a smooth sauce in highspeed blender.
Tabbouleh:
1) Combine bulgur, hot water, lemon juice, olive oil, salt and better in mason jar and let sit.
2) Chop parsley, mint, tomatoes, cucumbers, red onion. Combine with bulgur mixture in a large bowl.
3) Drizzle with additional olive oil and lemon juice, to taste. Toss gently to combine.
Pickled Onions:
1) Thinly slice red onion.
2) Squeeze lime over red onion along with splash of vinegar.
3) Sprinkle with sumac and salt.
Pita Bread:
1) Combine flour, salt, sugar, and yeast in a bowl. Slowly add warm water and knead until a smooth dough forms.
2) Cover and let rise for 1 hour until doubled in size.
3) Divide into 4 pieces, roll into rounds, and cook on a hot skillet for 2-3 minutes per side until puffed and golden.
Assembly:
Cut open fresh pita on one side and fold over closed side to create a pocket. Layer the ingredients starting with spreading hummus, followed by falafel balls, tabbouleh, pickled onions. Drizzle tahini and amba sauce on top. Flip back the open pocket, pull everything tight inside and roll into a tight wrap.
