༻༺ Gingerbread Cheesecake Cookies ༻༺

Ingredients:

Cookie Dough
2 1/2 cups all purpose flour
2 1/2 tsp ground ginger
2 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1/2 tsp salt
1/2 tsp baking soda
3/4 cup softened unsalted butter
3/4 cup brown sugar - packed
1 tsp vanilla extract
1/3 cup molasses

Cheesecake Filling
6oz softened cream cheese
3 tbsp granulated sugar
1/2 tsp vanilla extract

Spiced Sugar
6 tbsp granulated sugar
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp ground cloves

Directions:

Filling
line a cookie sheet with parchment paper
add cream cheese, sugar, and vanilla extract to mixer bowl
on med/high mix until sugar dissolves and appears fluffy
scoop into 2 tsp size pieces, this should make about 18

Cookies
preheat oven to 350 degrees
whisk the all purpose flour, spices (cinnamon, ginger, nutmeg, cloves), salt and baking soda together until combined
in electric mixer cream butter and brown sugar for about 2 minutes
add in egg yolks, molasses and vanilla, mix for 1 minute or until combined
slowly add in flour mixture until all ingredients combined
scoop dough into balls that are about 2 tbsp.
flatten the ball and place the frozen cheesecake into the cookie dough
form the cookie dough around the cheesecake until fully covered
roll cookie in sugar mixture
bake for 11-12 minutes
