Machboos Laham, a delicious Kuwaiti dish:
For the Meat:
Lamb cut into cubes
Onion, chopped
Garlic, minced
Cinnamon sticks
Cardamom pods
Bay leaves
Black peppercorns
Cumin seeds
tomato
fresh chilli
Kuwait mix laham masala
Salt

*Rice:*
2 cups basmati rice (washed and soaked for 30 minutes)
2 tablespoons vegetable oil
1 teaspoon ground cumin
Salt to taste

*Instructions:*

1. *Cook the Meat:*
Heat oil in a large pot over medium heat.
Add onions and garlic, cooking until onions are soft.
Add the meat and brown it on all sides.
Stir in tomatoes and cook for a few minutes.
Add the spices and salt.
Pour in water or broth, bring to a boil, then reduce heat, cover, and simmer for 1 hour, 40 minute or until the meat is tender.

2. *Prepare the Rice:*
In a separate pot, heat oil and add cumin.
Add the soaked rice, stirring for a minute.
Add 4 cups of water (or as needed), and salt.
Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until rice is cooked and water is absorbed.

3. *Serve:*
Serve the cooked meat on top of the rice.
