Описание к видео Roast Neck of Lamb ◆ 1930s Recipe

★ About this recipe: With the weather getting warmer, you might want a lighter roast dinner than usual. This fantastic '30s dish for Roast Neck of Lamb will do just the trick.

The recipe was published in ‘Cookery Illustrated and Household Management’ by Elizabeth Craig in 1936. Preparing the meat, shown here, is beyond simple.

The recipe specifies that the lamb should be served with Maître d'hôtel sauce and Stewed Cucumber and recipes for these were also provided in the same book. We will be sharing with you our cooking videos for the sauce and cucumber over the next week, but if you’re itching to have a go you can find full instructions for these on our website, linked below.

We also served ours with our 1930s recipe for roast potatoes from the very same book. Yum!

Note: There is a slight variation to the original recipe shown here. The recipe says to cover your lamb with buttered baking paper before popping it into the oven. This is only really worth doing if you have quite a large amount of meat, and as we had under 1lb of boned meat which would only need 15 mins in the oven altogether, there was no need for the paper - the butter by itself worked perfectly.

★ Ingredients:

A neck of lamb. Ours was boned, trimmed of it's fat, cut into 4 pieces, and just under 1lb in weight.
2-3 tbsp. butter
About a handful of fresh parsley, chopped
Stewed Cucumber
Maître d'hôtel sauce
