RECIPE

500g locust beans (Iru)
1 tablespoon of salt

Method of preparation:

Outsource your locust beans (Iru) to the local market.

-  Ensure it is free of dirt and sand.

Into a neat tray, add the locust beans.

Add salt to it.

Mix well until the salt is evenly distributed.

Spread it out properly with your fingers to ensure it doesn't clusters to allow air to penetrate properly.

Place under a hot sun for two days or approximately 48 hours.

Ensure it's properly dried (you can know this by the sound it gives when you touch it.

Pour it into a neat air-tight container.

Place it over the kitchen cabinets or at any cool and dry place.
