Millet Ambali Recipe Worth the Hype? A Simple Recipe for a Gut-Healthy Probiotic Drink
Making Fermented Millet Ambali (Whole Millet Version):
how to cook millets
Ingredients:1 cup foxtail millet (or other millet variety)
10 cups water

Instructions:Rinse and Soak: Start by thoroughly rinsing foxtail millet. Soak it in enough water for at least 8 hours, or overnight.
Cook the Millet: Drain the soaked millet and transfer it to a pot. Discard soaking water. It's your choice if you want to use it. Add 10 cups of water and bring to a boil. Reduce heat, cover, and simmer for 20-30 minutes, or until the millet is cooked through and the water has considerably reduced.
Cool and Transfer: Turn off the heat and let the cooked millet mixture cool slightly. Transfer the mixture to a clean earthen pot (recommended) for fermentation. You can also use a ceramic bowl, glass container, or even stainless steel if an earthen pot isn't available.
Fermentation Magic: Cover the pot with a breathable cloth, allowing air to flow but preventing contamination. Do not seal the container tightly.
Time for Transformation: Place the covered pot in a warm location for fermentation. Depending on your climate, it can take different amount of time for fermentation. To give you an idea, keep millets for fermentation for only that amount of time that it takes for curd to set at your location. If curd sets in 4 hours, then your millet should be fermented within that time period.
Enjoy! Once fermented, your millet ambali will be ready. It may or may not appear the same. In a mud pot, it might thicken a bit. You can enjoy it chilled like a refreshing drink, similar to buttermilk, or consume it thicker like an ice cream. o not cook ambali as it has good microorganisms or gut bacteria that cannot survive upon heating.you can drink it as buttermilk by blending along with green chili, salt, black pepper, cumin, and mint leaves.or make it into a kulfi by blending the ice cream ingredients , recipe already up on the channel. do she your experience about fermenting millets . see you again with yet another healthy recipe. tc
