Today we are going to make RAGI EGGLESS CHOCOLATE CAKE
Ragi and Whole Wheat Date Cake, using the ingredients you have on hand.

Ragi and Whole Wheat Date Cake
This cake is moist, naturally sweet from the dates, and has a wonderful nutty flavor from the ragi.
Ingredients:
1 cup whole wheat flour
1/2 cup ragi powder (finger millet flour)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup butter, melted and cooled
1 cup pitted dates
1 cup milk
A pinch of salt (optional, but recommended to enhance flavors)
Instructions:
Preparation: Preheat your oven to 180°C (350°F). Grease and flour a 9-inch round baking pan or a loaf pan.
Date Puree: In a small saucepan, combine the dates and milk. Bring to a gentle simmer, then turn off the heat and let it sit for about 10-15 minutes to soften the dates.
Blend: Transfer the softened dates and milk mixture to a blender or use an immersion blender to create a smooth puree.
Dry Ingredients: In a large bowl, whisk together the whole wheat flour, ragi powder, baking powder, baking soda, and a pinch of salt (if using).
Wet Ingredients: In another bowl, combine the melted and cooled butter with the date puree.
Combine: Pour the wet ingredients into the dry ingredients. Mix with a spatula until just combined. Be careful not to overmix; a few lumps are fine.
Bake: Pour the batter into your prepared baking pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The time may vary slightly depending on your oven.
Cool: Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
Tips and Variations:
For added texture: You can add chopped nuts like almonds or walnuts to the batter.
Sweetness adjustment: The sweetness from the dates is usually sufficient, but if you prefer a sweeter cake, you can add 1/4 to 1/2 cup of brown sugar or jaggery powder to the wet ingredients.
Flavor boost: A little vanilla extract or a dash of cardamom powder would be a great addition to the date-milk puree.
Serving: This cake is delicious on its own, or you can serve it with a dollop of yogurt or a drizzle of honey.
