Hearts of Palm Crab Cakes Recipe

I'm back with another recipe! This one was inspired through my love of brunch and some amazing "crab" cakes I had at one of my favourite restaurants, @plantatoronto. These Hearts of Palm crab cakes taste unreal, are affordable, and make the perfect fancy brunch item with some not so-fancy instructions. Let me know what you think!

RECIPE

Ingredients:
1 can of heart of palm
3 tbsp breadcrumbs (find vegan ones to make this recipe vegan!)
2 tsp vegan mayo
2 tsp capers
2 tsp onions
2 tsp dijon mustard

Instructions:

Chop up your hearts of palm finely so it has a shredded crab appearance

Mix in the other ingredients, adding the breadcrumbs in last and gradually

Heat a pan with oil on medium-high heat

Use a circular lid/tin lid to shape the crab cakes into a circular shape. Then, cook them in the pan for 2-3 mins each side.

Top with whatever you like! I did smoked salmon, poached egg & cilantro, but the options are endless!
