Shrimp Pho with Vegetable Broth Recipe

Ingredients:

*Broth:*
- 8 cups vegetable broth
- 1 large onion, halved
- 2-inch piece of ginger, sliced
- 4 cloves garlic, smashed
- 2 cinnamon sticks
- 4 star anise
- 4 whole cloves
- 1 teaspoon coriander seeds
- 1 teaspoon fennel seeds
- 1 tablespoon soy sauce or tamari (for gluten-free option)
- 1 tablespoon brown sugar
- Salt, to taste

*Pho:*
- 1 pound large shrimp, peeled and deveined
- 1 package of rice noodles (8-10 oz)
- 1 cup bean sprouts
- 1 cup shredded carrots
- 1 cup sliced mushrooms
- 1 cup fresh cilantro leaves
- 1 cup fresh basil leaves
- 1 cup fresh mint leaves
- 2-3 green onions, finely sliced
- 2 limes, cut into wedges
- 2-3 jalapeño peppers, thinly sliced (optional)
- Hoisin sauce (optional, for serving)
- Sriracha (optional, for serving)

#### Instructions:

1. *Prepare the Broth:*
- In a large pot, toast the cinnamon sticks, star anise, cloves, coriander seeds, and fennel seeds over medium heat for about 2-3 minutes until fragrant.
- Add the onion, ginger, and garlic, and continue to toast for another 2 minutes.
- Pour in the vegetable broth and add the soy sauce and brown sugar. Bring to a boil, then reduce the heat and let it simmer uncovered for at least 30 minutes. The longer it cooks, the more flavorful it becomes.

2. *Cook the Noodles:*
- While the broth is simmering, prepare the rice noodles according to the package instructions. Once cooked, drain and set aside.

3. *Cook the Shrimp:*
- About 10 minutes before you’re ready to serve, add the shrimp to the simmering broth. Cook until the shrimp is pink and opaque, about 3-4 minutes.

4. *Assemble the Pho:*
- Divide the cooked rice noodles among serving bowls.
- Ladle the hot broth and shrimp over the noodles.
- Top each bowl with bean sprouts, shredded carrots, sliced mushrooms, cilantro, basil, mint, and green onions.

5. *Garnish and Serve:*
- Serve the pho with lime wedges on the side for squeezing.
- Add jalapeño slices for extra heat, if desired.
- Offer hoisin sauce and sriracha on the side for additional flavor customization.
