Homemade Crunchwrap
Double recipe
Ingredients
2lbs ground beef
Extra grande big tortillas pack of 8
Pack of tostada shells
1 15oz can Nacho cheese
2 packs Taco Bell Original Taco seasoning mix
8oz bag Colby jack cheese
2 Jalapeños
1 yellow onion
1 head of roman lettuce
2 tomatoes
Cooking oil spray
2 cups water
Optional guacamole, Taco Bell verde sauce, refried beans for leftover tostadas
Directions
FIrst finely chop your jalapeños and onions, set aside for cooking. Cut your romaine lettuce in half and wash with a salad spinner or at least soak in a bowl of clean water. You can even use your sink as long as it is clean. Either way let lettuce soak with salt for as long as you like. I usually let soak the whole time I’m cooking. Once cleaned and dried cut your lettuce into about 1/4in or so strips to make “shredded lettuce” and set aside for homemade crunch wrap assembly. or you can always just buy shredded lettuce. Next you can dice your tomatoes into small squares and set aside for wrap assemble. Once all the prep is done now its time to start frying up your ground beef. You could add about a tbs or so of cooking oil if you like add your thawed ground beef. Fry your meat until browned then drain oil with a strainer or you could just use tongs and paper towels. Add in your jalapeños and onions. Keep frying and stirring until veggies are soft. Once meat is browned and veggies are soft go ahead and add your taco seasoning packets, you could always add your own spices if you like as well on top of taco seasoning packets. Add 2 cups of water to pot, stir really good, bring to boil then turn heat down to about medium and let simmer for about 10 minutes stirring occasionally, or if your like me constantly stirring. While that is simmering crack open your nacho cheese pour/scrap into a small sauce pot or you could just put into a bowl and microwave. You really just want to warm the nacho cheese up, turn heat up to high for about a minute then lower heat to medium low to keep cheese warm. Now time to assemble your wraps. But first heat up your flat pan or griddle and spray with cooking spray. Now lay your tortilla down on a plate and start adding your ingredients in center of tortilla. Lay each ingredient about the size of the tostada shell. First lay your nacho cheese, second ground beef,third tostada shell, forth shredded lettuce, fifth tomatoes, sixth shredded lettuce. Time to fold! For the first two folds, fold one side then the side directly across from the fist fold, then just go around and fold the rest of tortilla towards center. Once folded hold the wrap in middle of all of your folds and carefully lay the folded side of wrap onto your flat pan or griddle, heat on about medium high. All you are trying to do is get the wrap browned and a little crisp just keep an eye on it, does not take much time. Flip and do the same to other side and your all done! Well almost just need to assemble the rest. Eat with guacamole and hot sauce, can eat by itself or make some Spanish rice or fideo , or refried beans. Tip don’t stack wraps on top of each other they will get soggy, best to serve as they are made.
Leftovers
for leftovers you could either make more wraps or keep it simple and make tostadas. Just make some refried beans and use that as your bottom layer of tostada then, meat, lettuce, tomato’s , cheese, sauce, enjoy!
