叁巴辣椒酱的食材,份量大多跟自己喜好,agak-agak调整而煮成。用新鲜辣椒,辣椒干或现成辣椒糊,加虾米或不加等等,煮出来的叁巴酱的风味都各有精彩。而这款的叁巴酱,就是以新鲜红辣椒慢火炒成的,所以色质方面会比辣椒干或现成辣椒糊煮的叁巴酱来得更鲜艳。

材料A:
小葱头 - 15粒
蒜头 - 10瓣
黄姜 - 1小段 (20克)
姜 - 1小段 (20克)
红辣椒 - 25条
小辣椒 - 5条
虾米 - 1汤匙 (20克)
巴拉煎 - 2片 (10克)
油 - 4汤匙

材料B:
油 - 2汤匙
香茅 - 3支,拍扁

调味料:
糖 - 2茶匙

准备功夫:
1. 把小葱头,蒜头,黄姜,姜,去衣/皮切小块
2. 红辣椒,小辣椒去蒂切小段
3. 把材料B,放入搅拌机搅幼

煮法:
1. 烧热锅, 下油,加入材料B,香茅,中小火翻炒爆香(大概5分钟)
2. 加入糖,继续慢炒至油和辣椒糊分明(20-25分钟)
3. 熄火,现用或待凉盛入盒子,收进冰箱待用

*小题示:
1. 不要太辣的话,可以去掉小辣椒和红辣椒的籽

江鱼仔叁巴酱
材料:
3汤匙 自家叁巴酱
100克/1碗 江鱼仔
1粒 大葱头
1汤匙 亚叁酱 (加半碗水搅匀)
1汤匙 糖

Ingredients (Set A):
15 shallot
10 garlic
20g turmeric
20g ginger
25 red chilli
5 cili padi
1 tbsp dried shrimp
10g belacan
4 tbsp oil

Ingredients (Set B):
2 tbsp oil
3 lemongrass (flattened)

Seasoning:
1 tsp sugar

Preparations:
1. Remove the skins of shallot, garlic, turmeric, ginger and cut into small pieces
2. Cut red chilli, cili padi into small slices
3. Blend all ingredients stated in Set B above with a blender

Steps:
1. Heat the wok, add in oil, the blended ingredients (Set B), lemongrass and stir-fry it
2. Add in sugar, continue frying slowly until oil and chilli paste seems separated (it takes about 20 - 30 minutes)
3. Turn off the gas, let it cool down and store in a container, you can keep it in the fridge for future use

Tips:
1. You can remove the seeds of red chilli and cili padi if you prefer less spicy.
2. You can cook this sambal with ikan bilis, freestyle :)
