Chicken Fajita wraps are delicious easy to make and flavorful recipe combining shredded chicken, capsicum, onion, and a mix of fajitas seasonings.

These are the perfect party food or finger food using shredded chicken.
This is an easy recipe and they make the perfect snacking sandwich.

Ingredients
2 lb boneless skinless chicken breasts, shredded
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 yellow onion, thinly sliced
2 tsp Paprika, or adjust
1 tsp onion powder
1 tsp cumin powder
1 tsp garlic powder
1 tsp pepper powder
Salt to taste
2 tbsp olive oil
Tomato sauce 2 tbsp
Water 1/2 cup
Mayanoise 4 tbsp

shredded mozzarella cheese 1 cup
shredded Monterey Jack cheese 1/2 cup
Tomato sauce 1/2 cup with 1/2 cup water or you can use marinara sauce as well

Preparation
1. Cook the chicken in the instant pot for 8 minutes with salt, pepper powder and lemon juice. Shred the chicken and keep it aside.
2. Slice Onion and Bell Peppers and set aside.
3. Heat olive oil in a pan, add sliced the onion and peppers. Sauté until vegetable becomes soft. Add shredded chicken and mix it well.
4. Add fajita seasoning and mix it well. Add tomato paste , mayonnaise and mix it properly. Once it’s ready turn off the heat.
5. Preheat oven to 350° F.
6. Spray a 9×13 baking dish with non stick cookings spray. Tomato sauce or marinara sauce half cup spread on bottom of baking dish.
7. Place chicken mixture along middle of each tortilla. Roll up and place seam sides down in baking dish.
8. Pour more tomato sauce or marinara sauce over rolled wraps. Sprinkle with 1/2 cup montessary jacks and 1 cup of mozzarella cheese on top.
9. Bake at 350 degrees F for 25-30minutes, until cheese is melted and sauce is bubbly around edges. Garnish with cilantro if desired.
