Kinpira gobo is a popular Japanese dish consists of julienned or shredded burdock root and carrot, braised with soya sauce, sugar, mirin or sake and sesame oil. Burdock root is very crisp and has a sweet, mild and pungent flavour. This dish is so easy to cook and taste delicious as well. It also harmonizes well with pork in miso soup.
Burdock root contain a fair amount of dietary fiber ( 6g per 100g ),calcium, potassium, amino acids, and is low in calories.
