Ingredients to Make Maggi Khao Suey Recipe

2 Onions, finely diced
Oil- 1 tbsp
2 tblsp fresh Ginger garlic paste
1 ½ cans of Coconut milk/ 5 tbsp Coconut powder in 200ml water
½ tsp Turmeric powder
1 tsp Red Chilli flakes
6 cups vegetable stock
1 small piece of Lemon grass stalk
1/2 cup of Chickpea (gram) flour
½ cup Carrots , cubed (or other vegetables of choice)
Lemon juice and salt according to taste
2 packages Maggi Noodles
Corn Flour if required
Maggi tastemaker Masala- ½ tsp
Juice of half a Lemon
Traditional Garnishes-
1.Fried Onions
2.Fried Garlic chips
3.Crispy fried Maggi noodles
4.Hard boiled eggs
5.Lemon wedges
6.Chopped Coriander
7.Chopped Spring Onions
8.Chilli flakes/Chilli Oil

Preparation method: Steps to Make Maggi Khao Suey Recipe

Step - 1 In a large pot add a dash of oil and sauté the onions along with the ginger garlic paste , turmeric and the red chilli flakes until fragrant. Add in all the chickpea flour.

Step - 2 Toss in vegetable pieces and chopped lemon grass and cook till raw smell of the chickpea flour goes away.Add a splash of vegetable stock at this point.

Step - 3 Then whisk in 1 cup of stock and cook till thick.Add cubed tofu.

Step - 4 Add remaining stock bring to a boil. Simmer for 10 minutes .

Step - 5 If your Maggi noodles are not pre-cooked, boil them now until they’re slightly underdone, and place them at the bottom of a deep serving bowl.

Step - 6 With a ladle, pour the vegetable stew over the top of the noodles and garnish with traditional garnishes like boiled eggs, garlic chips, fried onions etc.
