Ingredients:

3–4 potatoes
1 liter vegetable or chicken stock
1 tsp coriander seeds
2 bay leaves
3 allspice berries
1 onion
1 carrot
2 tbsp butter
800 g skinless salmon fillet
800 g skinless seabass fillet
130 g processed cheese (8 triangles)
Dill
Salt & pepper to taste

Instructions:

1. Peel and chop the potatoes. Add them to a pot with the stock, coriander seeds, bay leaves, and allspice. Simmer for 20 minutes until tender.
2. Meanwhile, finely chop the onion and carrot. Sauté in butter over medium heat for 3 minutes until soft and fragrant.
3. Add the sautéed vegetables to the soup and cook for another 8 minutes.
4. Cut the salmon and seabass into bite-sized pieces. Add to the pot and simmer gently for 8 minutes.
5. Stir in chopped dill, salt, pepper, and processed cheese. Let it melt and thicken the soup — about 5 minutes.
6. Serve hot, ideally with crusty bread or a slice of rye. Cozy, creamy, and utterly satisfying.
