Along with my Tofu Pumpkin Spiced Pie (link above), I have added another a PSL addition to your fall season. It is both elegant and super fun!

Recipe:
(See video for US Imperial measurements. Metric below)

Mousse:
Yield: 9 mousses
6 pumpkin-shaped (size: 5cm length, 7cm width, 2cm in height) and
3 pon de ring (flower) shaped (size: 7cm in diameter and 2cm in height)

2 tsp (7g) gelatin + 1 Tbsp water
1/4 a Japanese kabocha pumpkin (total without skin, 250g) =150g pumpkin puree
35g sugar
Pumpkin Spice Mix below: (Optional)
1/2 tsp cinnamon
1/4 tsp ginger
1/8 tsp clove
1/8 tsp nutmeg
1/8 tsp all-spice
1 tsp vanilla extract
90ml milk
100ml heavy cream

Cookies:
Yield: 9 flower shaped cookies, 3mm in height and 9cm in diameter
Some extra, so you can make small cookies from them :)

60g butter
45g brown sugar
1/2 an egg
1/4 tsp (2g) salt
100g cake flour
14g almond flour
Pumpkin Spice mix below: (again, optional!)
1 tsp cinnamon
1 tsp ginger
1/8 tsp clove
1/8 tsp nutmeg
1/8 tsp all-spice

POINTS:

1. I recommend pushing the mousse into every crevice of the mold using a small spoon then tapping the silicone on the table to remove any air bubbles! I illustrate what will happen if you don't tap with the pon de ring flower mousse shape.

2. I recommend freezing overnight to easily remove the mousse from the molds!

3. Make the chocolate decoration on the back of the mold to fit the shape of the pumpkin! Make it very thick or else it will crack and become a true spooky nightmare!

4. If you don't like spices, feel free to omit them! It will be just as delicious :)
