INGREDIENTS: -
- 500 g Chicken Breast
For Brining
- 1 Cup Butter Milk
- 1 tsp Salt
For Marination
- 1 ½ tsp Red Chilli Powder
- ¾ tsp Pepper Powder
- Salt
- ½ tsp Mixed Herbs
- 1 tbsp Soya Sauce
- 1 tbsp Vinegar
- ¼ Cup Milk
- 1 tbsp Chilli Sauce
- 1 tsp Garlic Powder
For Coating
- 500 g Maida
- ½ tsp Red Chilli Powder
- Oil (for frying)

METHOD:-
Here I have taken 500 chicken breasts. Tenderize the chicken using a meat mallet and cut it into small bite-sized pieces. Next, add buttermilk and salt to a bowl and whisk it well. Now add the chicken to this buttermilk solution then mix well. Set aside for one hour.

After 1 hour drain the chicken well. Marinate the chicken with red chilli powder, pepper powder, garlic powder, soya sauce, red chilli sauce, vinegar, mixed herbs, and salt as required. Soya sauce contains salt and in the previous step we have already added some salt, so adjust the salt as per. Marinate overnight. Marinate at least for 4 hours for better results.

Next, we need to coat the marinated chicken in flour, for that add maida and red chilli powder in a bowl. Mix well to combine. Add marinated chicken to this flour one by one. At a time add only 4 to 5 pieces of chicken. Just cover the marinated chicken in flour for a light coating. After finishing the first batch of coating immediately sieve the flour to remove the lumps in the flour. This should follow after coating each batch of chicken and also in the second coating. Doing this will reduce the wastage of flour and forms a perfect crust.

Now we need to make the second coating, for that take some cold water in a bowl. Dip each piece of chicken in that water for 2 to 3 seconds then add to the flour. Before starting, cover the chicken in flour then rubs it with flour in a clockwise direction. Remember never let the chicken come in contact with your hands and keep your hands dry always before touching the floor.

Rub this until you get a nice crust over the chicken. Sometimes the chicken may stretch while rub with flour, shape it into the round before adding this to the oil without damaging the crust. Always prepare one batch of chicken at a time and fry it immediately. Otherwise, the crust becomes soggy and start sticking.

Heat some oil in a pan and the oil temperature should be low to medium always. Add chicken to a frying basket and dip in the oil. Cook for 3 Mins or until it gets a nice light golden brown colour. When we are frying using a wire basket the crust will be perfect and it gets cook evenly.

We can cook the chicken directly dropping this into the oil. But after frying three to four times the flour dust from the chicken starts settling in the bottom and the burned flour will start sticking into the chicken again. So, I prefer to use a wire basket. With this our crunchy KFC style fried chicken popcorn is ready.

Serve it hot with tomato ketchup or Hot sauce. Enjoy!!!!!
